I have a Libec Fluid head tripod, which is causing me problems - somehow something is loose inside the head - when I pan it frequently jumps an inch or two -resulting in a not very fluid pan. It feels like the mechanism itself is not seated well in the casing - however I can not find any way of undoing the casing to rectify this - any suggestions?

If it's new enough, bring it back. Aside from that I can't be much help.

What kind of camera are you using? I've found that some tripods get jumpy if the camera is too hefty for them.

You might want to try using a steadycam, if too much money, make one! tripods are a mess, especially when you do more tough shots. However, on shots where it is focused on a face and no movement is involved, use a tripod to stablilize. A general rule: if theres movement, don't use a tripod.
