For a movie I am making now, I have a scene that a vampire is impalled with a tent pole pounded through him with a rock while he is pressed against a tree. Blood needs to SPRAY out (needs to get in a priests eyes and mouth) and the vampire needs to be spitting out huge amounts of the stuff. Also, does anyone know how to make "holy water" look like it is burning skin and causing blisters, or will i need to slice cuts to get this effect?

I cant really help you in the horror genre, (although im sure others can and will) but I have a suggestion for the blood spray. I thought it would be pretty gory to use a lawn fertilizer pump sprayer thing, I cant remember the exact name but its One of those manual pump sprayers. The wide mist of blood would look pretty cool.

depends.. if you want to cut to a picture of just the priest in frame you could use some off-camera plastic-bags filled with blood and just squeeze them and let the blood spray the priest *S* i used that idea in a movie a couple of years ago and it looked very good.
but if you want the priest and vampire in frame at the same time.. the pump-sprayer idea by Thx1198 is a good start. you could also take a look at this site, it might give you some new ideas *S*.. http://www.exposure.co.uk/eejit/blood/index.html ..yes, compressed air and blood might do the trick *S* you could use a shower at the end to get the spray effect (?) ..
and the spitting part.. just poor some blood into the mouth of the actor (if you don't use a dummy) and let him spit it out when they stab him with the pole.
I hope this helps or gives you some new ideas.
