I think you're on the right track going the other way. Now, I can't say from experience what would actually happen if an eyeball caught on fire, in fact I think it would probably be pretty hard to catch an eyeball on fire in the first place. But if you take the footage of your actor and measure out very precisely where his or her eyes fall in the frame, you can line up another frame with your ping pong balls placed exactly the same way. Mount them above a matte surface (blue or black, depending on what kind of key you want to do and if your final project will be in color), light 'em up, hope they don't roll around too much, and then composite them in. With luck, they match up fine on the first try. If not... well, there's the second try, and the third, and the fourth... no one said this stuff was easy.
