(1) don’t use cheap microphones
(2) don’t but cheap field mixers
(3) CLOSE UP
People think that just because they have a “shotgun” mic (from what you describe, this is not a classic K6/66 or AT835) they can use it 20 feet away. A good, short shotgun mic must be between 3-4 feet of the speaker, a long shotgun up to 6, and a cheaper mic closer. As soon as you get farther, the camera has to use gain, which just like image gain adds “grain”. Go to www.24fps.com and look at the audio section for more info.
