Does anyone know if it would be possible to use CGI to create realistic looking bullet exits?

well, in saving private ryan, cg was used to ENHANCE exiting bullets. Just do an exit however you want(squib or sprayer). Then add extra blood, brains, pieces of head etc. This was probably used in the scene where the guy takes off his helmet and gets shot through the head. This was definetly used when the sniper in the tower was shot through the eye.

This takes a really long time to do, but if you have both Adobe Premeire and Photoshop, you can animate blood sprays and get a really good effect. What you need to do is first film the actor with the gunshot wound already placed on him. Then once you have the footage in premiere, make a filmstrip of it and import it into Photoshop. Once you have it in there, you can erase the wound for how many frames necesarry either by going in and pixel animating the wound out and then blurring the area so it doens't look really gittery, or, if the victim is wearing a white shirt, take the tool that looks like a black magnifying glass and lighten the area until you can't see the bullet hole. This effect works best in sunlight, whereas the other one is better under lower light conditions.
When you want him to get shot, take the eye dropper tool and pick your blood color off the actual gun wound on the actor. Then in about four frames, animate an explosion of blood, and then take the blur and smudge tools and smudge them until they look like they're in motion. It worked great for me.
Also, fool around with all these options a bit. you might find something that really works well.
