What are the cons and pros of each? What would you guys/gals recommend for claymation?

Always use the highest quality media you have access to. If you have DV and HI8 without a doubt use DV. It's the closest you will get to broadcast quality and will allow for very good transfers to film. If you are going to go direct to video it will be better for FILMLOOK(R). I am currently producing a feature and using the new Canon XL-1. The only other thing I would suggest is to always shoot in 16:9 format. But be sure your using a camera with true 16:9 not just a camera that stretches the frame.

Don't ALWAYS shoot in 16:9. If you do and try to play it back on a standard TV set, it will play back compressed horizontally.

I just got a Digital 8 and the video quality is excellent. As long as you don't mind Sony (I don't) the camera is great and you already have digital output in case you can ever afford a digital capture card.

However, there are some Hi-8 cameras that give better quality than the Digital 8 series. But they tend to be more expensive, and won't have digital output if you decide to get the DV card.
